Are all food types of equal value, from the point of view of sustenance?
Within each group (protein, fruit, vegetable, grain) are all the types the same?
Beef = walnuts = mutton = pecans
Wheat = bread = corn (= cake (assuming that it is considered a grain?))
yes mainly. sustenance point of view grain = vegts = fruits = meat
but some of crafted food can have multiple sustenance (which i ve tried to do) like pies = grain + fruits for example
So for example the Dairy produces 12 (educated) cheese from 15 milk, so the citizens would be better off drinking the Milk, unless the Cheese was both Protein and Vegetables.
And the system is good enough to actually understand this?

i dont have a spreadsheet, but if you go back and see last posts talking about each industries... you certainly can trace back .... or in game! which can be easier

Yes if milk and cheese are both protein then indeed drinking milk is 'cheaper'
But I take it that the cheese has a value higher then milk so there is a profit to be made from the production of cheese by trading some cheese.
Yes, in a few of my towns I've made good use of milk=>cheese for trading.
